Colombina de pollo

Place them between two pieces of plastic wrap. Flatten them with a mallet or rolling pin until they are 1/4 inch thick. Season them with salt and ground black pepper. HEAT oil in large skillet over medium-high heat. Add half of the pork slices; cook on both sides for 2 minutes or until golden brown and cooked through. Remove from skillet; set aside and keep warm. Do the same with the other slices.
